Dish: Prosciutto Mac & Cheese
Recently, a colleague raved about the prosciutto mac & cheese at Café Deluxe, so H.R. & I had to give it a go! We decided to run over one day for lunch, and let me tell you, we were not disappointed.
This mac & cheese uses my favorite noodle for the dish – cavatappi noodles. These are the best! The spiral shape and grooves in the noodle itself hold the roux and cheese better than any other, and this was no exception. The gruyere was melted and combined with cream (and I’m assuming a hefty amount of butter) and with the saltiness of the prosciutto, it was perfection.
When you go to Café Deluxe – get this! If you don’t eat pork (like N.S. who joined us and ate around it) still get the mac & cheese without the prosciutto. We all ate this as a side dish to our salads, but I gladly would have had it as a full dish all to myself and not shared with a single person at the table.
